HAMBURGER CHOWDER | |
1 lb. hamburger 1 tbsp. butter 3 lg. onions, sliced thin 4 stalks celery, cut into 1/4 inch pieces 3 c. water 4 med. raw potatoes, cut into 1/2 inch cubes 1 tsp. salt 4 peppercorns 1 tsp. accent 2 pkgs. frozen mixed garden vegetables Use a 1 1/2 quart or larger saucepan for this soup. Slowly saute the hamburger in the butter until it is a rich dark brown in color. Add the onions and celery and cook until the onions are slightly glazed. Add the water and the diced potatoes and cook until the edges of the potatoes are slightly transparent. Now add the salt, peppercorns and accent. Simmer for 5 minutes. Add the two packages of frozen vegetables and cook uncovered for 10 minutes or until the green beans in the vegetable mixture are easily pierced with a fork. Served with saltines, this is a meal in itself. VARIATIONS: Add 2 fresh tomatoes, cubed in 1/4 inch pieces. Add 1 (#2) can tomatoes. Add 1/2 package of chopped spinach. Substitute 1 package of frozen peas and carrots for the mixed vegetables. Substitute 2 packages frozen baby limas for the mixed vegetables. |
