PEPPER STEAK | |
1 1/2 to 2 lbs. sirloin steak (or other tender cut) 2 green peppers, cut in thin strips 1 lg. onion, sliced and separated 2 cans beef broth 2 tbsp. soy sauce (or to taste) Flour or cornstarch, approx. 2 tbsp. Mushrooms - fresh or canned Rice Cut steak in thin slices. Brown in butter. Add onion to beef as it browns. Add beef broth, flour or cornstarch (add enough water to make thickening), mushrooms and soy sauce. Cook about 20-25 minutes. Add peppers at end of cooking time so they will not become too soft. Cook until peppers are crisp tender. Serve over cooked rice. (Do not add any salt. The beef broth and soy sauce have enough salt.) Can add pepper to taste if desired. |
