ITALIAN APPLE CAKE 
3 c. flour
1 tbsp. baking powder
1 1/2 c. sugar
4 eggs
1 c. oil
1/3 c. orange juice
2 1/2 tsp. vanilla
3 medium apples, peel and slice thinly
1/2 c. sugar and 2 tsp. cinnamon, mix and set aside

Sift dry ingredients into large mixer bowl. Make a well and add oil, orange juice, eggs, and vanilla. Beat until smooth and thick, at least 4 minutes. Do not underbeat. Grease and flour a 9 or 10 inch tube pan. Pour 1/3 of batter into tube pan. Place 1/3 of the apple slices over the batter, then sprinkle part of the cinnamon-sugar mixture over the apples. Continue to add in layers of batter, apples, and cinnamon-sugar until the batter is gone. Top with remaining apples, sugar, and cinnamon. Bake at 350 degrees for one hour and 15 minutes. Cool 15 minutes, then remove from pan. Cool completely before cutting. Serves 16.
