FRESH APPLE CAKE WITH GLAZE | |
4 chopped apples 1/2 c. oil 2 c. sugar 1 tsp. vanilla 2 eggs, beaten 2 c. self-rising flour 1 tsp. baking soda 2 tsp. cinnamon 1 c. flake coconut 1 c. chopped pecans 1 tbsp. lemon juice Sprinkle lemon juice over apples. Beat together oil, sugar, vanilla, and eggs. Gradually blend in rest of ingredients. Bake 1 hour at 350 degrees in a tube pan. GLAZE: 1 stick butter 2/3 c. Carnation 1 tsp. vanilla 3/4 c. sugar Cook 10 minutes until soft ball stage. Remove from heat. Pour over cake, leaving a large portion of glaze in center hole of tube cake. |
