FRESH APPLE CAKE WITH GLAZE 
2 c. sugar
3 eggs
3 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
1 tsp. cinnamon
3 c. apples (peeled and chopped)
1 c. chopped nuts (pecan tastes best)

Preheat oven to 325 degrees. Grease and flour tube pan or Bundt pan. Mix oil and sugar in a bowl. Add eggs, one at a time, then add vanilla, flour, baking soda, cinnamon, and salt to egg mixture. Combine remaining ingredients (cake is very thick). Bake 1 1/2 hours. When cake is cool, apply glaze.

GLAZE:

1/4 c. butter
1 1/2 c. brown sugar
1 (5 oz.) can evaporated milk (do not substitute milk)
1/2 tsp. vanilla

Combine ingredients in a saucepan. Boil glaze to soft ball stage (approximately 238 degrees). Whip until glaze is of spreading consistency.
