JEWISH APPLE CAKE 
2 c. sugar
4 eggs
2 1/2 tsp. vanilla or 1/2 tsp. almond extract
3 c. unsifted flour
1 tsp. salt
3 tsp. baking powder
2 tsp. cinnamon
1 c. oil
4 c. chopped apples
5 tsp. sugar

Grease and flour a tube pan. Peel and slice apples. Mix the cinnamon and the 5 teaspoons sugar and let stand. Cream together the remaining sugar, eggs, vanilla, oil and salt. Mix flour and baking powder together and then stir into mixture.

In tube pan, put a layer of batter, a layer of apples and sprinkle with the cinnamon and sugar mixture. Repeat twice (3 times in all), ending with apples on top. Bake at 350 degrees for 1 1/2 hours.
