4 med. size sweet potatoes 1/2 c. (4 oz.) butter 1 tbsp. fresh lemon juice 1/2 c. (3 1/2 oz.) brown sugar 1/2 c. (4 fl. oz.) water Wash your sweet potatoes. Boil them in their skins, covered, for 10 minutes or until nearly tender. Meanwhile, make up a syrup with the remaining ingredients, and cook it in a small saucepan over high heat until the syrup coats a spoon, about 3 minutes. Also preheat oven to 375 degrees. When the sweet potatoes are cool enough to handle, peel them and cut them lengthwise about 1/2" thick. Lay them in a buttered shallow 2 quart baking dish. Pour hot syrup over the potatoes and bake, uncovered, for 30 to 40 minutes or until light brown. Baste a couple of times during baking. Add in some nuts or top with marshmallows, if you like. |
