ZUCCHINI BREAD 
2 c. grated zucchini squash
1 c. Crisco or other cooking oil
2 c. sugar
3 tsp. vanilla
3 tsp. cinnamon
3 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1 c. chopped nuts (pecans)
1 c. raisins
3 eggs

Beat eggs, oil, sugar and vanilla until thick. Stir in remaining ingredients. Mix well pour in loaf pan. Bake at 350 degrees for 1 hour, or until wooden pick inserted in center comes out clean.

Be sure to grease and flour the loaf pans before you pour in the batter. Enjoy.
