TOMATO PUDDING 
1 qt. canned tomatoes
30 finely chopped & crushed saltine crackers
1 c. sugar
3 tbsp. butter

Put tomatoes in medium size stew pot. Heat to boiling and boil 15 to 20 minutes. (If not mushy, chop to make so.) Slowly add sugar and butter, then add crushed crackers and stir until crackers disappear. Pour into buttered casserole dish and bake at 300 degrees for 15 to 20 minutes or until bubbly. (Can be served without baking if in a hurry.) Serves 8 to 10.
