CHICKEN A LA KING 
2 c. cooked chicken, cut up
2 tbsp. shortening
1/4 c. chopped onions
1/4 c. chopped green pepper
1/4 c. chopped celery
1/4 c. mushrooms
2 tbsp. chopped pimento
1 tbsp. chopped parsley
1 tbsp. butter
1 tbsp. flour
1 1/2 c. milk
Salt & pepper to taste

Melt shortening and fry onions, green pepper and celery in skillet until tender. Remove, melt butter in pan. Add flour until it makes a thick paste and then add milk gradually, stirring constantly, until mixture thickens.

Add salt and pepper. Add chicken, sauteed vegetables, pimento, mushrooms and parsley. Serve from pan.
