CHICKEN A LA KING CROQUETTES | |
4 tbsp. shortening 5 tbsp. flour 1 tsp. salt 1/2 tsp. pepper 1 c. canned chicken soup, chicken broth or milk 1 egg, slightly beaten with 1 tbsp. water 2 c. cooked chicken, cut sm. 2 tbsp. pimento, chopped 1/2 c. bread crumbs, dried & sifted Melt shortening in saucepan, add flour, salt, pepper and blend. Add chicken soup and cook until smooth and thick, stirring constantly. Remove from heat, add chicken and pimento. Blend well. Spread mixture in shallow pan; chill until stiff. Cut into croquettes with a 2 1/2 inch biscuit cutter. Roll in crumbs, then in beaten egg, then return to crumbs. Fry until brown in oil 1 1/2 inches deep. Drain on crumbled paper towel. Crabmeat can be substituted for chicken. |
