MANDARIN ORANGE CAKE 
1 c. sugar
1 egg
1 c. flour
1 sm. can mandarin oranges, drained
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla

Combine all ingredients and beat until well blended (at least 7 minutes). Bake 30-35 minutes at 350 degrees in a greased 8 x 8-inch pan. Remove from oven and while cake is still hot, pour over it the topping which has been melted together and brought briefly to a boil.

TOPPING:

1/2 c. brown sugar
2 tbsp. butter
2 tbsp. milk

Note: By doubling all ingredients this may be made in a 10 x 13-inch pan. Serves 9.
