CARROT CAKE 
2 c. sugar
4 eggs
2 c. self rising flour
1 tsp. vanilla
1 tsp. cinnamon
1 1/2 c. salad oil
3 c. fine grated carrots
1 c. pecans, chopped

Mix first 6 ingredients for 5 minutes. Add carrots and pecans. Beat and mix well all ingredients and bake in well greased pan at 350 degrees for 1 1/2 to 2 hours.

ICING:

1 (8 oz.) cream cheese
1 stick butter
1 box confectioners sugar
1 tsp. vanilla
Chopped nuts (optional)
