EASY CHICKEN CASSEROLE 
3 c. cooked, diced chicken
1 med. chopped onion
1 tsp. salt
1 c. butter
3 c. cooked rice
1/2 c. diced celery
1 can cream of chicken soup
2 tsp. lemon juice
Crackers
Optional: 1 c. toasted almonds

Grease 9 x 13 inch casserole. Combine all ingredients and crumble crackers. Sprinkle cracker crumbs over top and bake at 350 degrees for 30 minutes. Optional: Can also sprinkle toasted almonds on top.
