LEMON SUGAR COOKIES 
2 eggs
2/3 c. oil
2 tsp. vanilla
1 tbsp. grated lemon peel
2/3 c. sugar
2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt

Beat eggs until well blended. Stir in oil, vanilla and grated lemon peel. Blend in sugar and beat until mixture thickens. Sift flour, baking powder and salt together and add in 2-3 additions to egg mixture. Dough will be soft.

Drop by teaspoonfuls on ungreased cookie sheet about 3 inches apart. Gently press each cookie flat with bottom of glass that is lightly buttered and dipped in sugar. Bake 8-10 minutes in a 400 degree oven. Makes about 3 dozen cookies. For a more distinct lemon flavor, add more lemon peel.
