SAUSAGE - ZUCCHINI BOATS 
1 lg. zucchini
1 1/2 lb. cooked sausage
1/4 c. chopped onion
1 minced garlic clove
2 eggs
1/3 c. Parmesan cheese
1 1/2 c. bread crumbs or cracker crumbs
Salt and pepper to taste

Cut off ends of zucchini. Boil 8 minutes. Cut lengthwise; discard seeds and scoop out pulp. Mix with rest of ingredients in a blender. Fill zucchini shells with mixture. Sprinkle with additional cheese if desired. Bake at 350 degrees for 30 minutes. Serves 4-6.
