SWEET POTATOES IN ORANGE BASKETS 
12 oranges
10 med. sweet potatoes
1/2 c. butter
2 egg whites

Cut oranges in half, leaving strip of rind across top to form handle. Hollow out inside, reserving 1/2 cup juice. Cook potatoes in water until tender; drain. Peel; mash. Stir in butter and reserved orange juice. Beat egg whites until stiff; fold into potato mixture. Heap in orange baskets; place in baking pan. Bake in 350 degree oven for about 10 minutes or until heated through.
