SKILLET BREAKFAST PIE 
In 8-inch skillet, cook 4 slices bacon until crisp. Remove bacon from pan. In drippings of same skillet, cook 2 cups loose pan frozen hash brown potatoes or 2 cups diced fresh potatoes until golden brown. Season with salt and pepper.

Place bacon in an "X" across potatoes to divide top into 4 portions. Break 1 egg into each triangle portion. Cover and cook until eggs are set.

Makes 2 large servings.
