STUFFED PEPPERS 
8 med. green peppers
1/2 lb. each ground pork & beans
1 c. washed rice
1 lg. can tomato juice
1 lg. onion
3 tbsp. Crisco
2 tsp. salt
1/2 tsp. pepper
1/2 pt. sour cream

Cut tops off peppers and remove seeds. Mince onion and brown in Crisco. Mix into meat, rice and seasoning. Stuff peppers to 1/4 inch from top. Place in roaster upright. Add the tomato juice. Make sure peppers stay upright. Bake at 350 degrees about 1 hour. Test to see if rice is done. If desired add 1/2 pint sour cream. Shake roaster gently until cream is mixed. Serve.
