CHICKEN IN TOMATO - WINE SAUCE 
1 diced onion
1 clove garlic, crushed
1 (2 1/2 to 3 lb.) chicken
1 (8 oz.) can tomato sauce
1 c. hot water
Freshly ground black pepper
1 (4 oz.) can mushroom pieces, drained
1/2 c. white wine

Remove skin and fat from chicken. Cut chicken into serving pieces. Place all ingredients except mushrooms and wine in a large pot. Cover and simmer 45 minutes over low heat so that liquid barely bubbles. Add mushrooms and wine and cook 5 minutes more. Yields: 4 servings. 210 calories per serving.
