GROUND BEEF AND CABBAGE SOUP 
1 lb. ground beef
8 c. hot water
2 c. grated cabbage
2 c. sm. diced potatoes
1 c. chopped onion
1/8 c. steak sauce
1 tbsp. salt
1 tsp. pepper
1 (16 oz.) can cut up tomatoes with juice

Brown ground beef in skillet; set aside. Put water, cabbage, potatoes and onion together in 5-quart pot. Boil rapidly 15 minutes. Add steak sauce, salt, pepper, and tomatoes. Cover and simmer until all ingredients are tender. Add ground beef and simmer a few minutes.

This recipe is a good basic idea, but it needs a bit of tweaking. I suggest cooking the beef while you've got the vegetables boiling - there's plenty of time, and then the beef doesn't sit out as long. It doesn't give an idea of how long to simmer after adding the tomatoes, but I simmered it for about 20 minutes and it came out pretty good (the time could vary depending on how big you cut the potatoes - I cut them pretty small). The finished soup came out very bland, so I suggest adding much more salt and pepper than it calls for (and possibly other seasonings). I also think that if I make this again, I will try adding rice to give it a little extra texture.

Try adding a can of mild Rotel tomatoes. Gives soup more flavor. I also add fresh mushrooms to mine. I also make with Kielbasa.
