HARVEST CAKE 
4 c. fresh apples, diced
2 c. sugar
3 c. flour
1 c. cooking oil
2 eggs
1 c. walnuts, chopped
2 tbsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla

Mix apples and sugar. Let stand one hour. Sift together flour, soda, and spices. Beat eggs, add oil and vanilla. Add apple mixture. Combine flour with egg and apple mixture. Stir in walnuts. Bake in greased and floured Angel Food pan in 350 degree oven 1 hour or until done. Frost with plain white icing. Sprinkle with chopped nuts.

If baked in long pan, baking time is 30 minutes.
