HARVEST CAKE 
4 c. diced fresh apples
2 c. sugar
3 c. flour
1 c. cooking oil
2 eggs
1 c. chopped walnuts
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla

Mix together apples and sugar; let stand 1 hour. Sift together flour, soda and spices. Beat eggs; add oil and vanilla. Add apple mixture. Combine flour mixture with eggs. Stir in walnuts.

Bake in greased and floured tube or bundt pan in 350 degree oven for 1 hour. Frost with plain white icing and top with chopped nuts. Recipe can be cut in half and baked in loaf pan for 1 hour.
