HARVEST FESTIVAL CAKE 
4 c. chopped unpeeled apples
2 c. sugar
3 c. flour
2 tsp. baking soda
1 tsp. salt
1 c. Mazola oil
2 eggs, beaten
2 tsp. vanilla
1 c. chopped nuts
1 c. flaked coconut

SAUCE FOR TOP OF CAKE:

1 c. sugar
4 egg yolks
1/2 c. butter
1 c. heavy cream
Rum flavoring (opt.)

Mix apples and 2 cups sugar together and let stand 15 to 20 minutes. Sift flour, soda and salt together and add to the apple mixture with the oil, eggs, vanilla, nuts and coconut. Pour into 13 x 9 x 2 inch pan. Bake at 350 degrees for 40 to 45 minutes.

SAUCE: Mix sugar, butter, egg yolks and cream together. Cook in top of double boiler until thick. Store in refrigerator until used. Best when served warm.
