LENTIL SOUP 
Combine in a large pan:

1 c. dry lentils
2 1/2 c. water
2 tsp. or env. instant beef broth

Heat to boiling and boil 2 minutes. Remove from heat - cover - let stand 1 hour.

Add:

2 (12 oz.) cans beer
1/2 c. sliced celery
1/2 c. diced carrots
1/2 c. diced onion
3 slices diced bacon (or several slices Polska Kielbasa)
1/2 tsp. thyme
1 tsp. salt
1/4 tsp. pepper

Heat to boiling, reduce heat - cover. Simmer 1 hour and 15 minutes until lentils are tender. Remove from heat ands tir in 1 tablespoon vinegar.
