2 boxes lime gelatin 2 boxes strawberry gelatin 1 med. can crushed pineapple 1 env. plain gelatin 1/4 c. cold water 1 (3 oz.) pkg. cream cheese 1 c. whipping cream 1/2 c. pecans Sugar to taste Vanilla to taste Mix strawberry gelatin according to directions. Put into a large cake pan. Chill until partially set. Drain pineapple and save juice. Put half the pineapple and nuts in red gelatin and let set. Bring reserved pineapple juice to a boil. Add plain gelatin which has been softened in cold water. Add cream cheese and mix well. Cool, but don't let harden. Whip cream; add sugar and vanilla. Add to juice and gelatin. Mix and spread on top of red gelatin. Let set. Prepare lime gelatin according to directions on box. Let cool partially. Add remainder of pineapple and nuts. Pour on top of the gelatin and cream mixture. Chill until set. |
