OAT PANCAKES 
1 c. unbleached flour
1/2 c. oats
1 tbsp. baking powder
1/4 tsp. salt
1 c. skim milk
1 egg or 1/4 c. egg substitute
2 tbsp. vegetable oil

Heat griddle. Lightly oil. Combine flour, oats, baking powder and salt. Add milk, beaten egg and oil; stir just until dry ingredients are moistened.

Pour about 1/4 cup batter on hot griddle. Turn when the top is covered with bubbles and the edges look cooked. Turn only once.
