GOURMET POTATOES 
6 med. potatoes, boiled
3 c. shredded sharp cheddar cheese
1/4 c. butter
1 pt. sour cream
1/3 c. chopped green onions
1/4 tsp. salt
1/4 tsp. pepper
2 tbsp. butter

Peel and coarsely shred potatoes. Melt cheese and 1/4 cup butter in saucepan, stirring constantly. Remove from heat. Stir in sour cream, green onions and seasonings.

Combine with potatoes in greased 2 quart casserole, mixing gently. Dot with 2 tablespoons butter. Bake at 350 degrees for 30 to 40 minutes.
