SHRIMP JAMBALAYA 
1 clove garlic, crushed
2 c. canned tomatoes
1/2 c. diced ham
1/2 c. chopped onion
1 pt. raw shrimp, cleaned
2 tbsp. parsley
1 c. cooked rice
2 c. water
1 tbsp. diced bell pepper
1/2 c. diced salt pork
1/4 c. diced sausage
Salt & pepper to taste
1 chopped red pepper
1/2 bay leaf
1 tsp. salt

Place salt pork, ham and sausage in pan over low heat; fry until crisp. Add onion, garlic and bell pepper; saute until soft. Add tomatoes, red pepper pod, parsley, and bay leaf. Simmer and stir slowly until thick. Add rice, water and salt. Cover pot, simmer slowly about 10 minutes. Add shrimp. Cook again slowly over low fire until rice is tender.
