SHRIMP JAMBALAYA 
2 tbsp. fat
1 tbsp. flour
1 lb. ham, cooked & chopped
1 can tomato paste
1 med. onion, chopped
4 c. water
1 sweet pepper, chopped
Minced parsley
1 tsp. Worcestershire sauce
2 c. uncooked rice
2 c. shrimp, peeled & deveined
Salt, pepper & paprika

Melt fat and flour, stirring until smooth and slightly brown. Add chopped ham, shrimp and tomato paste. Cook about 5 minutes; add onion, seasoning and water. Simmer for 10 minutes. Add rice and cook slowly until rice is tender and falls apart. (Gulf Coast Recipe, Biloxi, Mississippi)
