SHRIMP BILOXI JAMBALAYA 
1 1/2 c. rice
1 1/2 qts. water
2 tbsp. salt
2 tbsp. butter
1/2 lb. ham
1 clove garlic
1/2 lb. spicy sausage
2 onions, chopped
2 green peppers, chopped
1 c. canned tomatoes
2 c. chicken bouillon
2 c. raw shrimp
Salt & pepper to taste
Dash Tabasco

Place rice in large saucepan with water and salt. Cook 5 minutes. Drain and rinse in cold water. Melt butter; add ham, garlic, sausage, onion and green pepper. Cook 10 minutes, stirring frequently. Reduce heat, add tomatoes, rice, shrimp, Tabasco, bouillon and salt and pepper. Cook until all the liquid is absorbed. Serves 4 to 6.
