TURKEY PEA CASSEROLE 
1 tbsp. butter
1 tbsp. onion, diced
3 c. turkey or chicken, diced
1 (10 oz.) pkg. frozen peas
1 (10 1/2 oz.) can cream of mushroom soup
1 c. Cheddar cheese, grated
1 (2 oz.) jar pimento, diced
2 tsp. mustard
1/2 tsp. garlic powder
Hot cooked rice

In glass 1 1/2 quart casserole, melt butter. Add onion, cook until transparent. Stir in remaining ingredients. Mix well. Cover, cook on High heat for 10 to 12 minutes, or until bubbly, stirring once during cooking. Serve over hot rice. Serves 4. In conventional oven, bake at 325 degrees for approximately 35 minutes.
