BAKED RED SNAPPER | |
2 lb. fresh or previously frozen red snapper fillets or other fish fillets 2 tbsp. lemon juice 1/4 tsp. cloves and mace 1/2 c. chopped celery 1/2 c. chopped onion 1/4 c. chopped green pepper Place fillets in greased baking pan. Drizzle juice over fish. Sprinkle with 1/4 teaspoon of cloves and mace. Bake fish in 350°F oven for 10 minutes. Meanwhile, prepare sauce. In saucepan, combine celery, onion, green pepper and vegetable juice cocktail. Simmer, uncovered, for 10 minutes. Remove fish from oven. Drain off liquid. Pour vegetable sauce over fish. Return fish to oven and bake 15 minutes more or until fish flakes easily when tested with a fork, basting with the vegetable sauce occasionally. Low-fat recipe. |
