AUTHENTIC ITALIAN SAUCE 
6 sm. links of sausage
3 tbsp. oil, divided
2 sm. onions, sliced
1 clove garlic
1 can Hunt's stewed tomatoes
1 lg. can Red Pack tomatoes
1/2 tsp. salt
1/2 tsp. basil
1 tsp. sugar

Brown the sausage slowly in 1 1/2 tablespoons oil for 1/2 hour. In cook pot put 1 1/2 tablespoons oil, onions and 1 clove garlic, left whole. Cook for about 4 minutes (do not brown). Add the sausage and the remaining ingredients and simmer for 1/2 hour. Then remove sausage and garlic clove and put through a food mill. Return sausage to sauce and simmer 1 hour and 15 minutes. Sauce should be thick.

MEATBALLS:

1 lb. beef (ground chuck)
2 eggs
4 tbsp. parsley, chopped
10 grinds of black pepper (use a pepper mill)
1/2 tsp. oregano
2 slices whole wheat bread
1/2 tsp. salt
6 heaping tablespoon of Stella Parmesan cheese
1 tsp. basil

Mix together and form into balls and brown on all sides in oil. Simmer in above sauce recipe for 1 hour and 15 minutes.
