On medium heat in a heavy skillet, heat bacon grease. Carefully break the eggs into a bowl or cup. Slowly pour the eggs (no more than 3 at one time) into the heated grease.

Take a fork or the edge of your spatula and slide it through the thick part of the whites. This will thin out the whites and make them cook more thoroughly without making the yolks hard.

Use the edge of your spatula to cut and separate each egg so that you can flip them over and cook the other side.

This is the best way to make over medium eggs (of course if you want them over easy, just don't flip them, if you want well done you can either lower the heat to medium low and cook a little longer, or break the yolk).

I have become slightly famous making these eggs in our town. They are a hit for almost all fried egg lovers!
