BRANDY DATE BALLS | |
3/4 c. sugar 1/2 c. butter 1 lb. chopped pitted dates 1 egg, well beaten 1/2 tsp. salt 1 tbsp. brandy 1 tsp. vanilla 1/2 c. chopped nuts 1/2 c. graham cracker crumbs 4 c. maple flavored buckwheat flake cereal Finely chopped nuts or shredded coconut Heat sugar, butter and dates in 3 quart saucepan over low heat, stirring constantly, until butter is melted; remove from heat. Stir in egg and salt. Cook over very low heat, stirring constantly, about 4 minutes; remove form heat. Stir in brandy, vanilla, 1/2 cup chopped nuts and the cracker crumbs. Cool 5 minutes. Stir in cereal; shape into 1 inch balls. (For easy shaping, rub butter on your fingers.) Roll balls in finely chopped nuts. Makes 5- 6 dozen balls. |
