CHICKEN WALDORF SALAD | |
1/4 tsp. unflavored gelatin 2 tbsp. cold water 3 tbsp. white wine vinegar 2 1/2 tbsp. unsweetened apple juice 2 tsp. vegetable oil 1/2 tsp. sugar 1/4 tsp. salt 1/4 tsp. dry mustard Dash of pepper 2 c. shredded cooked chicken breast, about 1 lb., skinned and boned 1 1/2 c. cubed unpeeled Red Delicious apple, about 1/4 lb. 1/2 c. sliced celery 1/2 c. halved seedless red grapes 3 tbsp. raisins 2 tbsp. chopped walnuts 4 c. loosely packed torn romaine lettuce Sprinkle gelatin over 2 tablespoons cold water in a small saucepan; let stand 1 minute. Cook over low heat, stirring until gelatin dissolves. Combine gelatin mixture, vinegar, apple juice, and next 5 ingredients in a jar. Cover tightly and shake vigorously. Combine chicken and next 5 ingredients in a large bowl; toss gently. Add gelatin mixture; toss gently. Arrange 1 cup lettuce on each of 4 salad plates; top each with 1 1/2 cups chicken mixture. Yields 4 servings, about 271 calories per serving. |
