2 3/4 c. sifted cake flour
3 tsp. baking powder
3/4 tsp. salt
1 c. vegetable shortening
1 1/2 tsp. vanilla extract
1 1/2 c. sugar
1 c. milk
8 egg whites
Rich coconut fruit

1. Sift flour, baking powder and salt together.

2. Cream shortening with the extract and the 1 1/2 cups sugar, beating until mixture is fluffy.

3. Beating only until smooth after each addition, add flour mixture and milk.

4. In large bowl beat eggs, add all ingredients. Fold into cake batter.
