LAYER FRUIT CAKE 
1 c. shortening
2 c. sugar
4 c. flour
1 c. sweet milk
8 egg whites
1 lb. raisins
1/2 lb. currants
1/4 lb. candied cherries
1 tbsp. baking powder
1 tsp. cloves
1 tsp. cinnamon
1 c. nuts
1 tsp. allspice
1 tsp. nutmeg
1/2 lb. citron

Cream sugar and shortening; add spices, milk, and egg whites. Sift flour and baking powder together; add to creamed sugar and shortening. Add fruits and nuts. Bake in 5 layers at 350 degrees.

FILLING:

Juice of 2 oranges
Rind of 2 oranges, grated
1 lg. coconut, grated
1 c. boiling water
Juice of 2 lemons
Rind of 2 lemons, grated
2 c. sugar
4 tbsp. cornstarch

In sauce pan, mix all ingredients except cornstarch. When this begins to boil, add cornstarch mixed with a little cold water. Boil until thick enough to spread. Let cool, then put between layers and on top of cake.
