CARROT AND RAISIN SALAD | |
3 c. grated carrots (about 3/4 lb.) 1 (8 oz.) can crushed or tidbit pineapple in its own juice (drain slightly, reserve juice) 1/4 c. raisins 2 tbsp. mayonnaise or salad dressing 2 tbsp. reserved pineapple juice 1 tsp. sugar 1/8 tsp. salt Place carrots, pineapple and raisins in a medium bowl. Combine remaining ingredients; pour over carrot mixture and stir well. Chill before serving. |
