CURRIED CHICKEN | |
2 med. chicken breasts cooked and diced 1/2 c. Italian dressing 1 med. green apple, cubed 1/4 c. sliced celery 3 tbsp. raisins 4 pita rounds 8 lettuce leaves In medium bowl combine chicken and dressing. Marinate 4 to 8 hours. Add apples, celery and raisins, yogurt dressing into chicken mixture. Full pita with chicken. YOGURT DRESSING: 1 c. plain yogurt 1/2 tsp. curry powder 1/4 tsp. mace |

I had no mace on hand, found out mace is essentially the same (very close, not exact) to nutmeg. No nutmeg either.....looked at my pumpkin pie spice and the ingredients of that are cinnamon, ginger, nutmeg, and allspice. So I used that instead. I could sort of detect the fact it was pumpkin pie spice, but it wasn't really disagreeable, just "odd". I will definitely have this recipe from now on for my pita lunches. I WILL pick up some mace!
Oh one last thing, mine did get quite runny, I think what I forgot to do was to drain the marinate from the chicken before combining. I let it marinate overnight and combined in the early morning, then made my pita. I was pre-caffeine so sort of forgot to do that.
