APPLE CIDERED CHICKEN 
1 1/2-2 lb. fryer mixed parts
1/4 c. flour
1 tsp. salt
1/2 tsp. pepper
1/2 c. shortening
1 c. apple cider
1 (22 oz.) can sliced pie apples & juice
1/2 tsp. mace
1/2 tsp. cinnamon

Mix flour, salt and pepper in paper or plastic bag. Place chicken in bag with flour mixture and shake well until each piece is coated evenly.

Melt shortening in skillet. Brown chicken in shortening. Place in casserole. Pour apple cider over chicken and cover tightly. Bake for 40 minutes at 350 degrees. Uncover and place apple slices evenly over top of chicken. Pour the juice of the apples on top and sprinkle with mace and cinnamon. Bake for 20 minutes longer, uncovered, to brown and glaze. Makes 4 servings.
