FISH ALMONDINE 
1 lb. fish fillets
1 tsp. salt
1/8 tsp. pepper
1 egg
1 tbsp. water
1 c. all-purpose flour
Shortening (part butter)
1/4 c. butter
1/4 c. slivered almonds
1/4 tsp. salt
2 tsp. lemon juice

If fillets are large, cut into serving pieces. Season with 1 teaspoon salt and the pepper. Beat egg and water slightly. Dip fish into egg, then coat with flour. Melt shortening and butter in skillet to 1/8 inch. Fry fish over medium heat about 10 minutes.

In small skillet, brown butter; stir in almonds, salt and lemon juice. Spoon over cooked fish. 3-4 servings.
