MINTED BEETS WITH APRICOTS 
Beets, fresh and young
Mint sprigs
Lemonade concentrate

Steam young beets until barely tender. Skin and slice, if large. Place in a casserole and dot with apricot jam. Cover with sprigs of mint. Dot with butter. Pour lemonade concentrate over top. Cover casserole. Bake at 325 degrees for 20 minutes (until tender). Remove herbs before serving. Garnish with sprinkling of fresh minced mint leaves.
