ORANGE BEETS 
1 lb. fresh beets
2 tsp. cornstarch
1/2 tsp. ground ginger
1/2 tsp. ground nutmeg
3/4 c. orange juice
1 (11 oz.) can mandarin oranges, drained

Leave root and 1 inch of stem on beets; scrub and place in saucepan; add water to cover. Cover pan, bring to boil, then reduce heat and simmer for 30 minutes, or until tender. Drain; pour cold water over beets. Trim off roots and stems and rub off skins; slice beets and set aside.

Combine cornstarch and next 3 ingredients in saucepan; bring to a boil and cook 1 minute, stirring constantly. Add sliced beets and mandarin oranges to sauce; cook until heated. Yield: 6 servings. 56 calories per serving.
