SUGAR FREE ORANGE BANANA BREAD 
2 c. flour
1 1/2 tsp. pumpkin pie spice or your favorite mix of spices
1 tsp. baking soda
1 tsp. baking powder
1 c. mashed ripe bananas
1 (6 oz.) can frozen unsweetened orange juice, thawed
2 eggs, beaten
1 c. raisins or 1 c. nut meats or 1 c. candied fruit mix (opt.)
1/2 tsp. lemon extract
1/2 tsp. salt

Mix dry ingredients. Blend well the bananas, orange juice, eggs and extract. Stir in any optional ingredients used. Add dry ingredients. Stir just until moistened. Pour into greased loaf pan or pans. Bake in 350 degree oven for 40 minutes or until well done. Cool in pan 10 minutes. Remove from pan and let cool on rack. Slice thinly.

I used to make a sugar free banana bread for my mother many yrs ago. Thought this was the same recipe but it's not. This bread tastes very bitter and rubbery. Followed recipe exactly still had to cook it 15 minutes longer. No one could eat it so I had to throw it away and try it again. Turned out the same way. Will try a different recipe next time.
