FROZEN CHOCOLATE MINT SQUARES 
1 1/2 c. finely crushed chocolate wafers (30 wafers)
6 tbsp. butter, melted
1 jar (7 oz.) marshmallow creme
1/2 tsp. mint extract
Few drops green food coloring
3/4 c. miniature semi-sweet chocolate chips
2 c. whipping cream

Combine crushed wafers and butter. Press mixture firmly onto the bottom of a 9x13 inch pan.

Beat the marshmallow creme, mint extract, and food coloring with an electric mixer on medium speed until smooth. Fold in 1/2 cup of the chocolate chips.

Whip cream until soft peaks form. Fold the whipped cream into the marshmallow creme mixture. Spread over the crumb crust. Sprinkle the rest of the chocolate chips over the top.

Freeze at least 6 hours. When ready to serve, remove from freezer and let stand 10 to 15 minutes. Cut into squares and serve.
