CHICKEN LOAF JAPANESE STYLE 
1 lb. ground chicken (or ground pork)
5 tbsp. miso (soybean paste)
4-5 tbsp. sugar
2-3 tbsp. sake
1 tbsp. soy sauce
4 oz. bread crumbs
1/4 lb. tofu, lightly pressed
2 eggs
Sesame seeds for garnish
Green nori seaweed (optional garnish)

Combine ground chicken, miso, sugar, sake and soy sauce in a bowl and mix together. Add bread crumbs, tofu and eggs and mix thoroughly. Line the bottom of a cookie sheet with aluminum foil. Shape the mixture into a 9 x 9 inch square and place on the foil. Using a spatula, draw a design on the surface and sprinkle sesame seeds on top. Bake at 400 degrees for 20 minutes or until cooked through. Cut into the shape of an unfolded fan or another shape of your choice.
