CHICKEN LOAF 
1 lg. chicken
Water
Celery, chopped
Onion and salt to taste
2 envelopes plain gelatin
2 tbsp. cold water

Cover chicken pieces with water. Add chopped celery, onion and salt to taste. Cook until tender. Drain and strain broth. Cool and skim off fat. Remove meat from bones. Shred or coarsely grind the meat. Heat 1 pint of broth. Soften gelatin in the 2 tablespoons cold water. Add to broth and stir until dissolved. Add to chicken and mix. Season to taste with salt and pepper. Pour into a loaf pan, chill. Slice for sandwiches.

I have been looking for this recipe since my Grandmother passed away. I omitted the gelatin and used crushed saltines. This is how my Grandma did it. We have this for supper the night before Thanksgiving every year.
