CHICKEN LOAF WITH MUSHROOM SAUCE 
2 c. diced cooked chicken
1 c. soft bread crumbs
1/4 c. celery, cooked
2 tbsp. finely chopped pimento
1 tbsp. minced parsley
1/2 tsp. salt
1/4 tsp. paprika
2 eggs, well beaten
1 c. milk
2 tbsp. butter

Combine ingredients, mixing well and pour into a greased loaf pan. Bake in a moderate oven (350 degrees) for 35 minutes.

Unmold carefully on a platter; garnish with parsley. (Do not add strong flavors such as onion, garlic or chile.)

MUSHROOM SAUCE:

4 tbsp. butter
4 tbsp. flour
2 c. milk
2/3 c. cooked or canned mushrooms
1/2 tsp. salt
1/4 tsp. paprika

Melt butter and blend with flour. Add milk and cook as a white sauce until thick. When sauce is thick add mushrooms, salt and paprika. Serve over chicken loaf.
